AUBERGINE / EGGPLANT DIP (thermomix)
Ingredients:
- 620 g aubergine ( UK) / eggplant (US)
- 3 teaspoon garlic paste
- 20 g of olive oil
- 20 g lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1 teaspoon salt
Preparation:
- put in the Thermomix bowl, garlic paste and olive oil and set 3 minutes at 100 °C ( 212°F ) speed 1

- when timer rings, add the chopped aubergine/eggplant, spices and lemon juice, salt and set 40 minutes at 100 ° C ( 212° F ) speed Gentle stir setting ( spoon )

- When timer stops mix 10 seconds speed 4

- Serve warm or cold
